Honey Balsamic Roasted Brussels Sprouts
Ingredients:
- 1 lb Brussels Sprouts halved or quartered
- 8 tbsp Coconut Oil melted
- .25 c Balsamic Vinegar
- 1 Lemons zested and juiced
- 1 tsp Honey
- 2 tsp Fresh Thyme or 1 tsp dried
- 2 tsp Fresh Rosemary or 1 tsp dried
- .75 tsp Garlic Powder
- .75 tsp Onion Powder
- .5 tsp Sea Salt
- .5 tsp Ground Black Pepper
Instructions:
- Preheat an oven to 375 degrees.
- In a large bowl, whisk together the coconut oil, balsamic, lemon juice, lemon zest, honey, thyme, rosemary, garlic powder, onion powder, sea salt, and black pepper until well combined.
- Add the Brussels sprouts and toss until coated. Let the sprouts sit in the marinade for 15 to 20 minutes, so they infuse with the flavors.
- Spread mixture in a glass baking dish and pour any excess marinade over the sprouts.
- Roast in the oven for 30–40 minutes or until your sprouts are tender.
- Remove from oven and serve with your favorite meal. These taste great re-heated as well.
