Watermelon, Cucumber, and Feta Salad
Ingredients:
- 6 c Watermelon cubed and seedless
- 3 Cucumbers chopped
- 2 c Feta Cheese cubed
- .5 c Red Wine Vinegar
- .25 c Shallots thinly sliced
- 2 tbsp Lemon Juice
- 1 tsp Fresh Thyme leaves picked
- .5 tsp Sea Salt
- .25 tsp Ground Black Pepper
- .75 c Olive Oil
- .5 c Fresh Mint torn
Instructions:
- Cut watermelon, cucumber, and feta about the same size about 3/4 inch cubes.
- Combine watermelon, cucumber, and feta in a large bowl; set aside.
- Combine vinegar, shallot, lemon juice, thyme, salt, and pepper in a medium bowl. Slowly drizzle in oil, and whisk until emulsified. Toss watermelon mixture with 1/2 cup of the dressing. Transfer to a serving platter, and drizzle with remaining dressing. Sprinkle with mint leaves before serving.
