Brussels Sprouts with Browned Butter and Lemon Zest

  • 1 lb Brussels sprouts about 20
  • 1 lemon zested and juiced
  • 1 c butter unsalted, 2 sticks
  • 1 tsp sea salt


  1. To prepare Brussels Sprouts, remove any loose or wilted leaves and trim the stems.
  2. In a medium cooking pot with a tight-fitting lid, set a steamer basket over 1 1/2 inches of water.
  3. Add Brussels sprouts to basket, and steam over high heat until tender, about 10 minutes.
  4. Melt butter in a large skillet over medium-high heat.
  5. Add salt and cook, watching carefully, until butter sizzles, browns slightly, and gives off a nutty aroma.
  6. Zest the entire lemon (about 1 tablespoon) then squeeze juice from lemon halves into the pan and add the zest.
  7. Stir in Brussels sprouts; cook, shaking pan occasionally, until warmed through.
