Mushroom Barley Stew
Ingredients:
- 4 c Vegetable Broth
- 1 c Mushrooms cremini, rinsed and sliced
- 0.50 c Pearl Barley uncooked, rinsed and sorted
- .5 c Carrots 1 carrot, chopped
- .5 c Celery 1 stalk, chopped
- 0.50 c Onions .5 onion, chopped
- 1.5 tsp Fresh Thyme
- 2 tsp Tomato Paste
- 1 Dried Bay Leaf
- 1 tsp Sea Salt
- 0.50 tsp Ground Black Pepper
- 1 tbsp Dried Parsley
Instructions:
- Combine all ingredients in slow cooker.
- Cover and cook on low for 5 hours.
- Remove and discard bay leaves. Enjoy hot.
