When preparing bruschetta, the quality of this recipe completely depends on the quality of the tomatoes. Get the ripest, juiciest you can find, you can use any variety and just go with the quality! (In the video heirloom tomatoes are used but you can use any kind of tomatoes to your liking).
While we usually think of bruschetta as the tomato portion of this recipe, the word bruschetta actually refers to the preparation of the bread (cut, olive oil, and garlic). It isn’t always topped with tomatoes, it can be made with other ingredients too such as mushrooms or cheese, but tomato is the most popular!
This appetizer consists of a mix of simple ingredients that you probably already have in your pantry. Bruschetta shows that food doesn’t have to be fancy to be extremely satisfying. All you need is fresh bread, toppings, and tomatoes that are ripe and sweet, and de-seeded.
Fresh Tomatoes
Basil
French Bread
Parmesan cheese
Olive Oil
Garlic
Bruschetta is made up of very simple flavors and is, therefore, best if you make it with the highest quality and freshest ingredients you can find.
Ingredients
4 tomatoes, seeded and diced
1/3 cup chopped fresh basil
1/4 cup shredded Parmesan cheese
2 cloves garlic, minced
1 Tbsp balsamic vinegar
1 Tbsp olive oil
1/4 tsp sea salt
1/4 tsp freshly ground black pepper
1 loaf French bread, toasted and sliced
Directions
In a bowl, toss together the tomatoes, basil, Parmesan cheese, and garlic. Mix in the balsamic vinegar, olive oil, kosher salt, and pepper. Chill for 1-2 hours. Serve on toasted bread slices.
Tips: De-seed the tomatoes so the bruschetta doesn’t get watery and it also prevents the bread from getting soggy.
Try to maintain the shapes of different tomatoes to add to the presentation of the dish. Other ingredients can be added according to your taste – olives, avocado etc.
