Simple Vegetarian Gluten-Free Couscous
Ingredients:
- 2 tbsp Butter
- 1 c Onions 1 onion, finely chopped
- 2 cloves Garlic minced or pressed
- 1 c Gluten-Free Couscous
- 2 c Vegetable Broth
- 2 tbsp Fresh Parsley
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
Instructions:
- In a pot with a lid, melt butter.
- Add chopped onions, stir, and allow to cook until soft about 3 minutes
- Stir in garlic and cook for another minute.
- Add couscous, stir, then add vegetable broth.
- Bring to a boil then remove from heat, cover, and let stand for 5 minutes.
- Stir in parsley and add salt and pepper to taste.
