Veal & Bacon Meatloaf
Ingredients:
- 3 Carrots medium, chopped
- 2 stalks Celery chopped
- 0.5 c Onions vidalia, peeled and chopped
- .25 lb Bacon divided
- 1.5 lb Veal
- 1 Eggs
- 1 tbsp Coconut Flour
- 2 tbsp Coconut Aminos Or Tamari
- 1 tbsp Ground Mustard
- 1 tbsp Dried Marjoram
- .75 tsp Sea Salt
- .50 tsp Ground Black Pepper
Instructions:
- Preheat oven to 400F.
- Place chopped carrots celery, onion, and 1 slice of bacon in a food processor. Pulse until vegetables and bacon reach a fine mince.
- Place vegetable mixture in a large bowl. To the vegetable mixture, add veal, egg, coconut flour, coconut aminos or tamari, mustard powder, marjoram, sea salt, and black pepper. With clean hands, mix well to combine.
- Transfer meatloaf mixture to a 5x9 inch loaf pan. Place the remaining 3 slices of bacon on top of the meatloaf.
- Place in the oven and bake for 60 minutes.
- Remove from oven and let cool. Serve with your favorite side dish.
