Instant Pot Chicken Cacciatore
Ingredients:
- 3 Shallots chopped
- 3 cloves Garlic chopped
- 1 Bell Peppers green, seeded and finely diced
- 0.75 lb Mushrooms sliced
- 1 tbsp Olive Oil
- 0.50 c White Wine
- 3 lb Boneless Skinless Chicken Breasts
- 14 oz Crushed Tomatoes 1 can
- 2 tbsp Tomato Paste
- 6 oz Black Olives 1 can, pitted
- 0.25 tsp Crushed Red Pepper Flakes
- 0.50 c Parmesan Cheese grated
- 0.50 tsp Sea Salt
- 0.25 tsp Ground Black Pepper
Instructions:
- Press "SAUTE" button on Instant Pot. Add olive oil to the bottom of the pot.
- Add shallots, garlic, and bell pepper. Cook, stirring frequently, until the shallots soften slightly, about 2 minutes.
- Stir in the wine and boil until about half evaporates. Scrape up any browned bits sticking to the bottom of the cooker.
- Stir in the mushrooms. Place the chicken on top of mushroom mixture. Cover the chicken with crushed tomatoes. Do not stir. Add tomato paste on top of tomatoes.
- Close the lid and lock into place. Close the steam valve. Press "MANUAL" button and cook on high pressure for 8 minutes. When cook time is complete, quick release the steam.
- Carefully remove chicken and sauce. Serve with rice, pasta, or your favorite sides.
